The Carving Knife is a one-handed melee Peasant weapon, notable for its fast attacks and lack of ability to flinch.

(tl;dr - the knife could be thrown and does considerable dmg to the head too)
If you are aiming for unlocking the achievement "Living sculpture" on steam, instead of using the carving knife as your primary weapon, you could try bringing your opponent's hp down with dull weapons such as Heavy Branch or Frying Pan, and then throw the knife at their torso or head to finish them off, doing so will also contribute towards achievement progression and is considerably easier than confronting directly with a carving knife.
